The wine making process
First vines are grown in a soil called 'Albariza'.
Then, Palomino grapes are carefully cut from the vines.
After that, musts are poured in metal tanks.
Next to, The new wines are classified for ageing.
The wine is fortified with alcohol from the wines.
Casks are made of American oak.
Then, older winesare blended with younger wines.
Later, Fino wines are aged under yeast or 'velo de flor'.
Finally, wine is bottled from the lower butt.
Manzanilla is produced only in Sanlúcar de Barrameda.
